Feta Cheese
The Captain is Greek
The old man makes noodles yes, but he makes a special egg dish for the captain, who if you have forgotten is a woman of Greek heritage.
The commotion on deck did not distract him, but it did remind him of the captain. He intuits her favorite breakfast to be his version of a Greek omelet, but his is not made in a skillet. Yes, some would find this to be a sacrilege. Nobody is watching him. He has nothing to prove to anyone. I imagine this scene to be off putting to anyone who has trained in a kitchen.
Some would chop the washed baby spinach, but the old man puts a fist full in a blue one-quart glass bowl and puts that bowl in the microwave for a minute, while he mixes three eggs in small stainless mixing bowl, and then pours that on top of the spinach, and sets the timer for two minutes.
He tastes the feta cheese before he slices it, to see how much salt is in it. He slices two Campari tomatoes, as well, and then puts two slices of multi grain bread down. The eggs are more than half cooked when flips them gently and then adds the slices of spinach and tomato, before he grinds black pepper on top, and puts the bowl back in the microwave for ninety seconds.
The toast comes up, and he butters that, realizing only then that there is no telling when she will eat any of this.
